Strawberry Charlotte
Ingredients of Strawberry Charlotte :
1) 1 swist roll
2) 4 eggs yolks
100 g sugar
3) 250 ml milk
1/2 tsp vanilla essence
4) 15 g gelatine
250 g whiping cream
200 g strawberries
5) 1 tbsp honey
1 tbsp orange marmalade
1 tbsp hot water
1 tbsp brandy
how to make Strawberry Charlotte
method :
1. Cut swiss roll into 5 mm slices. Arrange tightly in the interior of a litre round mould
2. Beat well ingredients (2). Heat Ingredients (3) and add in ingredients (2). Continue to cook over low heat, stirring occasionally until the mixture thickens. Remove from heat. Stir in gelatine until dissolved and let cool.
3. Beat cream until fluffy and add to method (2). Stir well. Pour 2/3 of the gelatine mixture into the mould.
4. Cut each strawberry into 4 slices. Keep sufficient slices for decodation. Mix the rest with the remaining 1/3 gelatine mixture and then pour into the mould. place remaining swiss roll slices (if any) on top. Chill in the refrigerator for 2 hour or until set. Invert onto plate.
5. Mix well ingredients (5) and brush over the surface of the charlotte. Decorate with strawberry slices and serve
