Ingredients :

200 g chinese spinach
75 g butter
120 g flour
50 g icing sugar
1/4 tsp salt
1 egg
1/4 tsp vanilla essence
Method :
1. DIscard stems of chinese spinach. Rinse leaves and blanch in hot water briefly. Soak in cold water, drain and squeeze dry. Chop finely to form a paste and set aside.
2. Beat melted butter, icing sugar and salt until creamy. Beat in egg bit by bit. Add in sifted flour and vanilla essence. Mix well and then stir in spinach paste.
3. Spoon the batter into a piping bag. Pipe smalll cookies on a greased baking tray. Bake in an oven preheated to 50 degree celcius / 300 degress F for 25 minutes. Let cool, sprinkle with extra icing sugar and serve
